Wazwan is a grand feast where people gather to savor delicious Kashmiri dishes, with Rogan Josh being the highlight—a delectable lamb curry cooked with saffron, cardamom, and fennel, known for its rich flavor and tenderness that will keep you craving more. 

Wazwan is a testament to the culinary expertise of Kashmiri chefs, known as 'Wazas.' These skilled cooks meticulously prepare each dish with precision, using traditional cooking methods and a diverse array of spices.

A multi-course experience

However, there is more to Wazwan than just one dish—it consists of a variety of mouthwatering options, ranging from aromatic appetizers to sumptuous main dishes and delectable desserts. Each course offers a unique combination of flavors and textures, showcasing the diversity of Kashmiri cuisine. 

Some examples include succulent meatballs in a spicy red sauce (known as Rista), or tender meatballs in a creamy yogurt sauce (known as Gustaba). And don't overlook the Pulao, which is aromatic rice cooked with saffron and spices that enhance its flavor.

Wazwan also comprises delicious accompaniments such as Tabak Maaz (crunchy fried lamb ribs), Seekh kebabs (delicious ground meat on skewers), and Dum Aloo (flavorful spicy potatoes).

The 'Trami' ritual
